Although not in the specific genre of documentary style filmmaking, I would say:
1) The Coen Brothers - especially for their unique vision forn "Oh Brother Where Art Thou" and their recent remake of "True Grit".
2) Peter Jackson - Lord Of The Rings Trilogy
3) The Wachowski Brothers - The Matrix Trilogy
Each of these were done with a very unique vision, unlike many of the movies one sees these days.

Now there's a question which demands a broad answer! The first is Jim Jarmusch whom I am currently completing my dissertation on - He's a strong personality with plenty of guts and creative honesty. Secondly, late anime director Satoshi Kon - He did psychological thrillers perfectly in my opinion. Thirdly, Aki Kaurismaki - I admire the way that his films are so humorous without being slapstick or decidedly over-the-top.
