What tendencies do you see coming on strong?
The trend towards using more fresh, local and organic product thrills me! It's something that I've always done and I'm excited to see that more and more chefs are willing to source their food more carefully. The popularity of books (and t.v. shows) like The 100-Mile Diet, show that this age-old "trend" is rising in popularity too! Making friends with your local farmer is better for your business and better for the environment. It's often an extremely affordable option! I have farmers who grow specific items just for me and give me a much better price than if I were to buy from some of the big food suppliers (who bring in their food from who knows where!) Field to fork is definitely the way to go!
I see foreign wines becoming more readily available and at better prices in the future. This is a good thing as there is so much good wine out there.
I see more people choosing healthy options - but the options have to be there to choose!
I see that what people want out of their dining experience, above all else, is to be wow'ed made to feel important. I mean what ever you can do to make me happy i choose to spend my time and money with your business, everything from the graphic and interior design to the pace of service and plating of food contributes to this. They want to smile, and they want to be wow'ed . And they want valuemake me feel i've gotten more then i paid for.

In Cooking, I think the tendency is Buffets....people love them as they get a good variety and they can choose the foods they want to eat. Visually seeing what you are putting on your plate helps.
In the cake world there are a lot of good designers coming thru with some really different designs
I think the growing trend at the moment (which I like), is that both people and chefs are becoming far more willing to try ingredients that they might not of been willing to try 5 years ago. Experimental Britain.
Difficult one this. I have found that spices are widely used now and sometimes spices are put into food when there is no need. Chilli sauce is a good one, why do resturants think the hotter it is the better Chilli is very versatile and if used properly it would serve a lot more types of custom
Every person that I know, cooks a bit differently. But in my house there's been always a pressure on eating vegetables and fruits. I broke it a little bit, but well - it was worth it!
I am a go-getter and have big plans for the future. I plan on creating chefwear and cookware for kids, hosting a TV show, publishing a series of cookbooks, and creating a line of spices.
Health and vegetarian food
Cooking is getting more global, blending the different flavors is so amazing. I look forward to more people begin to enjoy the world. Mixing different cultures is so wonderful. Hmmm, isn't that what we do in Hawaii...
More people following the Mediterranean Diet.
