I am very picky about the foods I work with. I hVe toured 6 different meat packing facilities, 7 different major supply houses, met with well over 200 brokers and manufacturer's reps. Dozens of farmer's markets, fish houses, the list goes on for a while, I believe strongly that if you start with crap, you end up with nothing more than "refined crap" at best. 


Yes. Right now, I make sure I look at everything I buy at the super market before I use it in my products. But when I eventually buy on a larger-scale, I will definitely still hand-select each and every ingredient I buy. 


if i need something new, i would usually purchase them myself unless it is being supplied & delivered by suppliers.
for imported items, i get to the grocery or supermarkets, but for fresh produce, i would go to the market..
 


I personally purchase (or make) everything I cook with. Among things I make are pancetta, sausages, and pasta . I purchase produce at the farmers' market in-season and from high-end grocers (think Whole Foods) off season. Meat comes from local producers. 


Yes, normally. I prefer to frequent the local greengrocer or farmer's markets. At my childhood home, I would pick many of the ingredients from my own gardens or in the forest in my backyard. If mine didn't have it, I'd go to friends' or family members' gardens.
