Why do so many artists and creators have such volatile personalities?
its very hard to make a living as an artist, you have to hustle, and market yourself to the masses.which in some intances doesnt work.

I don't know that this is a true statement.
Creativity is a mixture of passion and pain. And volatile is Interesting.
Artists could be volatile because they pursue their interests with a certain doggedness and want to stand for what they believe in. But cartoonists are not really volatile people. They could be ordinary or at times with a little sense of humour.
Over sensitive... frustrated... who knows. Your guess is as good as mine.

I do not agree that artists and creators have a volatile personality, but if that is true,
I do not know why.
Sometimes thinking outside the box does that to them.
There is a thin line between madness and genius.
Unfortunately the artist is an outsider for the most part in our society. Many don't seem to understand nor care very deeply about art and so the artist is left to his own survival tactics mostly going against his grain by working jobs which don't suit them and never getting the recognition they hope to see in their lifetime.
Because the artist was the dreamer
Instead of volatile I would call it passionate.
Each person (artist) has a different personality, some of us are more or less expressive than others but I think that being passionate is something common in all the creative people.
I think we tend to be perfectionists, and ruthless about what we're creating. Sometimes that not only extends to our art, but our lives and relationships. We want what we want. Sorry, man.
